Flavourful, Budget-friendly Red Lentil Soup
A one-pot soup you’ll fall in love with as it is so simple to make, yet so flavourful. If you love dhal, then you probably have all the ingredients at home already.

  1. Add the oil to a large pot on medium heat. Add the onion and fry it until translucent. Add the garlic and stir through.
  2. Add the spices (cumin and turmeric). Allow it to become fragrant in the pot and then add the vegetable stock.
  3. Add the carrots and the dried red lentils. Turn up the heat, bring the pot to boil and once boiling, turn down the heat and allow it to simmer until the lentils are completely soft/mushy. I keep an eye on it and use a wooden spoon to avoid the dhal from burning at the bottom of the pot. Once the lentils are mostly done (about 20 minutes), add a cup or two of water based on the consistency you’d like.
  4. Add salt and black pepper to taste. Serve with fresh lemon slices and baked bread.
