I don't know what it feels like to eat clouds drizzled with the perfect amount of sweetness, covered in a vanilla bean ice cream and topped with fresh berries, but I imagine it was this experience I had on Saturday. OH EM GEE! SO good!

For those of you who know, Saturday is a day of rest for me. I log out of all social media and work channels and chill in bed all day. Some Saturdays I chill at the beach. Keyword: chill aka REST.
Yesterday, however, the birthday girl (if you followed my stories you'll know) dragged us out of bed to join her for brunch. Even though my bed felt SO good, all she had to do was show me @eatlazycat 's Instagram 😻

I am back in the Middle East. I've been here since Friday. It all happened so fast. There's a story to tell. A beautiful story. One that gives God all the glory. But I ain't telling it here just yet... πŸ’­
Yesterday I ordered the Mrs Vegan burger from @paularabia which gave me all the feels 😍 Gosh, it is so good! And with the delivery came their complimentary bread basket including their delicious olive tapenade. So, pictured above is my daily bread, a gift, the bread I need for this day: sourdough, topped with olive tapenade, fresh avocado, oil and herbs - Lord, I thank thee πŸ™Œ

SMOKEY STUFFED PEPPERS (Vegetarian) πŸ“’First up, SMOKEY STUFFED PEPPERS (Vegetarian)
πŸ“’First up, lemme say, I wasn't planning to make this picture/recipe part of my feed but when y'all ask me to 'koppel a recipe', how can I refuse? So let's not focus on the styling today neh πŸ‘€
Here goes:
INGREDIENTS:
β€’ 1/2 cup brown rice
β€’ 2 tbsp Plant-based butter or oil
β€’ 1 small onion, peeled and chopped (I actually used 4 sprigs of spring onion)
β€’ 3-4 garlic cloves, peeled and crushed 
β€’ 1 tbsp smoked paprika 😍
β€’ 1 x 400g tin of black beans (make sure there's no added junk in there, just black beans and brine), drained 
β€’ 1/2 tin of peeled and diced tomatoes
β€’ 1/4 c sweet chilli sauce (real stuff)
β€’ 2 Red or Yellow Peppers, halved lengthwise and seeds removed. 
β€’ Extra virgin olive oil to rub
β€’ salt to taste 
β€’ 2-3 tbsp date syrup 
METHOD:
1) Cook and steam your rice as per the package instructions. Set aside.
2) Melt the butter (or heat the oil) in a large pan on the stove. Add the onion and garlic and cook until fragrant. Add the smoked paprika and stir through with a wooden spoon. 
3) Add the black beans and stir through, mashing some with a wooden spoon as they soften. 
5) Add the tomatoes and the sweet chilli sauce. Bring the heat up until the sauce becomes bubbly and then take it down low to simmer. Keep your eye on it, stirring occasionally. 
6) In the meantime, preheat the oven to 180 degrees Celsius. Prepare the pepper halves by rubbing it with the oil and place it open side down on a baking tray. Sprinkle with salt. Place it in the oven and roast on both sides until blistered with some firmness. About 20 minutes in total. 
7) While that's roasting, check on your black bean sauce. It should be nice and juicy. Add the date syrup  and the rice. Stir through well. Now taste. Do you need salt? Then sprinkle some in there. Taste again. That's it, your filling is ready. 
8) Remove the roasted pepper halves, and stuff 'em with that smokey black bean stuffing. 
9) OPTIONAL. Top with grated cheddar or feta. You could put it back into the oven to melt, or enjoy it right away!

as we head into the weekend! My friend and I shared this beauty which was plenty!
I LOVE how it looks like a giant lamington but as soon you insert your fork you get the moist carrot cake with the crunch of the walnuts. And that macaron prettiness on top... they sure know how to macaron at P&J!
