• GRATITUDE POST • With all that has happened • GRATITUDE POST •  With all that has happened in and around the world these last few months, being able to celebrate another birthday is truly a gift. I recognise that and I want to thank each and everyone who took time out of their day yesterday to call me/tag me in beautiful memories and/or send me sweet messages.  My very first quarantine birthday was REALLY special. (2 more sleeps until we're quarantine-free!)  The last few days leading up to my birthday I had so many 'what if' and 'I wish' moments which, come to think of it, stole my joy. But, as I spent some time being quiet yesterday morning, I was reminded to be present in THIS moment. As soon as that revelation dropped God showered me with love from morning 'til midnight. I am still in awe of all the lovely surprises that filled my day with great joy. A special thank you to my darling husband and my two angel friends (they know who they are) for making me want another quarantine birthday 👀 You are MORE than a blessing to me.  PS. They even got me this FLIPPIN' amazing vegan cake. It's whole grain and naturally sweetened with a peanut butter date caramel filling 😍 Need I say more?

I'd love to share a testimony about a recent experience with Hamadi Clinical Laboratories in Claremont. I started writing this on our flight back to Kuwait on 2 January 2021. A rescheduled flight.  We landed in South Africa on 18 December 2020 and our flight back to Kuwait was booked for Friday 1 January 2021, 18h20. Now, when entering Kuwait, a negative PCR test of 96 hours is required. My friend and I planned to get our Covid-19 test done on Wednesday 30 December 2020, 2 days prior to our scheduled return to Kuwait. Said friend went to Hamadi Clinical Laboratories on Wednesday morning and I went to get tested there that evening around 6pm. (I did not want to spend part of my already-short holiday in a long queue and heard that the queues at Hamadi weren't long. In addition, we were advised to go there in the evening. Hamadi also happens to be one of the cheapest (R780) options on a list of recommended testing stations provided by Emirates.)  Thursday, 31 December, just after 1pm, my friend called me in a panic as her PCR test came back POSITIVE. Now, if you know this friend, you would know that she is probably one of the most cautious people around. We were the only 2 passengers on our flight to SA wearing Hazmat suits thanks to her! She had no symptoms at all and couldn't understand why her test stated that she was POSITIVE. Nevertheless, I tried to calm her, ensuring her that everything would be okay. I called our head in Kuwait to ask him the way forward as she obviously wouldn't be in time for the start of our new term on 4 January 2021, due to the regulated 2-week quarantine. He assured me that the school wouldn't penalise her as long as she is able to teach online from her home. This, whilst I didn't get my test results yet.  We also needed to look at rescheduling her flight due to the delay that her quarantine would cause. In the meantime she got a company to fumigate the 2 homes she stayed at during her holiday at her own cost.  *CONTINUE READING IN THE COMMENTS*

HOME ❤️ It's been a week and a few hours sin HOME ❤️  It's been a week and a few hours since arriving on South African soil after almost a year! That was definitely not the plan for 2020 but if there's anything this year has taught us, it's this: His ways are higher than ours; let go and let God. Today I am so grateful for such a time as this. Though we cannot physically all be together this Christmas, we have technology to bring us a little closer.  With that, I should say, it has been very nice to let go of technology, especially social media, during this time. But today, I just wanted to pop on here to wish all of you who celebrate the birth of Christ a very blessed Christmas. I hope through it all you can experience great joy today!

However, these little golden berries are highly nutritious and make a great alternative to my norm. #eattherainbow  Oh, and my love for oat milk gets stronger and stronger every day. Note to my plant-based milk lovers: when purchasing plant-based milk, always make sure it is fortified.

PURPLE POTATO RICE RAMEN - Turmeric Curry Soup Oo PURPLE POTATO RICE RAMEN - Turmeric Curry Soup  Oooh child! My tummy is still having a party while I post this. I found another delicious ramen brand: @lotusfoods 🙌🏻  This ramen is made with organic brown rice which makes it gluten free. It requires 4 minutes cooking time in a pot on the stove top. I added fresh avo and some coriander to garnish. But can I tell you, I never finish the soup part of the ramen. Well, today was a different day. And with the cooler weather we're experiencing here in the Middle East at the moment, this bowl of ramen with it's turmeric curry soup was SO comforting.  Need.More!

As promised, CHOCOLATE CHIP BANANA MUFFINS (plant- As promised, CHOCOLATE CHIP BANANA MUFFINS (plant-based) can now be seen on the blog 🤭  These muffins are SO easy to make and whilst absolutely scrumptious they also happen to be egg-free, dairy-free, gluten-free and sugar-free 🤭🤭  Seriously, when I realised how powerful ripe bananas actually are, I asked myself, why do people bother with unnecessary ingredients like eggs in something like a banana bread or -muffin? Less is more, my friends. Less is more. (I don't like complicated recipes 😅).
