Creamy, budget-friendly tuna rice

  1. Cook the rice according to the packet’s instructions. My brand cooked for 20 minutes. I also added 1 teaspoon of salt to the water.
  2. While the rice is cooking, add the olive oil to a large pan on medium heat. Add the garlic and allow the flavour to come through.
  3. Add the peas and the tuna and allow to fry for a minute. We don’t want mushy peas.
  4. Add the rest of the ingredients (sour cream, lemon juice and parsley) and stir through until well combined and cooked through. About 3 minutes. Add salt to taste.
  5. Once the rice is cooked, drain well. Add the rice to the tuna mixture and stir through. Et voila!
